Triple Berry Oat Slice




This triple berry oat slice is a delicious and convenient recipe for on-the-go breakfasts or filling snacks - perfect for busy families who are constantly on the go! Oats and berries are incredibly nutritious - being rich in antioxidants, high in fibre, and even helping to lower cholesterol and improve blood sugar control, all while keeping you feeling fuller for longer!



Ingredients

  • 2 cups rolled oats

  • 1/2 cup reduced sugar applesauce

  • 1/2 cup unsweetened almond milk

  • 1/4 cup pure maple syrup

  • 2 Tablespoons chia seeds

  • 2 teaspoons coconut oil, melted

  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1/2 teaspoon sea salt

  • 1 1/2 cups mixed fresh berries (chopped strawberries, raspberries, blueberries)



Directions

  1. Preheat oven to 200C or 180C fan forced. Spray and line a 8x8 baking tray and set aside.

  2. In a large mixing bowl, combine all ingredients except the berries, stirring until well combined.

  3. Fold in 1 cup of berries and pour into baking tray, spreading mixture evenly. Top with remaining 1/2 cup of berries.

  4. Place into the oven and bake for 35-40 minutes, or until the top is golden brown. Remove from oven and allow to cool before cutting into squares. Serve immediately or store in an airtight container in the fridge for up to 1 week.
