Baked Lemon Blueberry Oatmeal



There is nothing better than starting the day with a little bit of what feels like comfort food, especially on a cold autumn morning! This delicious breakfast is sure to become a family favourite, providing them with all the protein and complex carbohydrates they need to stay energised and engaged all morning! Tip: I find blending the mixture can make it more palatable those family members who can be a little more pickier with textures.



Ingredients

  • 1 large ripe banana

  • 1 1/2 cup rolled oats

  • 2 Tablespoons flax meal

  • 1/4 cup maple syrup

  • 1 cup almond milk (unsweetened)

  • 1 large lemon (zested & juiced)

  • 1 teaspoon baking powder

  • Pinch of salt

  • 1/2 cup blueberries



Directions

  1. Preheat oven to 190C or 170C fan forced.

  2. Place all ingredients except the blueberries into a blender and mix until smooth.

  3. Pour mixture evenly into ramekins, fill to half, then top with blueberries. Pour more mixture over the top until berries are covered and top again with blueberries.

  4. Sprinkle oats over the top and place in the oven for 30 minutes, or untl golden brown.

  5. Carefully remove from the oven and serve warm with a scoop of Greek yoghurt (optional). Enjoy!
