Chocolate Raspberry Bliss Balls





These 4-ingredient bliss balls are pure decadence! They are quick and easy to prepare and make the perfect sweet treat to spoil that special someone with this Valentines Day.



Ingredients


To make the bliss balls:

  • 1 x 400ml can reduced fat unsweetened coconut milk

  • 2 Tablespoons coconut oil, melted

  • 3 Tablespoons freeze dried raspberries, blitzed to powder like consistency

  • 300 grams 70% dark chocolate, chopped


To make the chocolate coating:

  • 100 grams 70% dark chocolate, chopped

  • 2 Tablespoons coconut oil, melted



Directions


1. Place the coconut milk, coconut oil and raspberries in a small saucepan over a low heat and simmer for about minutes, careful not to let mixture boil.

2. Add the chocolate and stir occasionally until chocolate has fully melted.

3. Transfer mixture to a bowl and refrigerate for about 2 hours.

4. Spoon out tablespoon sized amounts of the chocolate mix and roll into balls using the palms of your hands. Place on a lined baking tray and pop in the freezer for 30 minutes to set.

4. While the balls are chilling, prepare the chocolate coating by melting the chocolate and coconut oil over low heat.

5. Using a skewer, dip the balls into the chocolate mix until fully coated, draining off the excess, then placing back on the lined tray. Sprinkle with raspberry powder, crushed candy, nuts (optional)

6. Place in the freezer to set for 10 minutes and then transfer into an airtight container. Store in the refrigerator for up to one week. Enjoy!
