Triple Berry Choc Chia Puddings

These triple berry choc chia seed puddings can be enjoyed as a healthy breakfast, dessert, or snack! Chia seeds are packed full of high-quality protein, fibre and omega-3 fatty acids, as well as several essential minerals and antioxidants. They support digestive health, and may help reduce risk factors for heart disease and diabetes. The puddings are super easy to make and can be made in advance, providing you with the fuel you need to start each day.



Ingredients

  • 1/2 cup organic cacao powder

  • 4 Tablespoons maple syrup

  • 1 teaspoon pure vanilla extract

  • pinch of sea salt

  • 2 cups coconut milk

  • 2/3 cup chia seeds

  • 2 cups mixed fresh berries (blueberries, raspberries, strawberries)

  • 1 cup coconut yoghurt to serve (optional)



Directions

  1. Sift the cacao powder into a medium sized mixing bowl. Mix in the maple syrup, vanilla extract and salt, whisking to combine. Pour in the coconut milk and chia seeds and continue to whisk until well combined.

  2. If you prefer a smoother texture to your pudding, pour the mix into a blender and process until mixture is smooth.

  3. Pour evenly among individual serving bowls, cover in cling film and refrigerate overnight.

  4. Serve with mixed berries and a dollop of coconut yoghurt. Enjoy!
