These triple berry choc chia seed puddings can be enjoyed as a healthy breakfast, dessert, or snack! Ingredients
1/2 cup organic cacao powder
4 Tablespoons maple syrup
1 teaspoon pure vanilla extract
pinch of sea salt
2 cups coconut milk
2/3 cup chia seeds
2 cups mixed fresh berries (blueberries, raspberries, strawberries)
1 cup coconut yoghurt to serve (optional)
Directions
Sift the cacao powder into a medium sized mixing bowl. Mix in the maple syrup, vanilla extract and salt, whisking to combine. Pour in the coconut milk and chia seeds and continue to whisk until well combined.
If you prefer a smoother texture to your pudding, pour the mix into a blender and process until mixture is smooth.
Pour evenly among individual serving bowls, cover in cling film and refrigerate overnight.
Serve with mixed berries and a dollop of coconut yoghurt. Enjoy!
