Summer fruit salad with pistachios & mascarpone cream



A delicious, light and fragrant summer fruit salad - perfect to serve when you have friends and family around for lunch. Including beautiful in-season fruits like nectarines, peaches, raspberries and blueberries, this will definitely be a summer favourite!



Ingredients

  • 2 ripe nectarines, thinly sliced

  • 2 ripe peaches, thinly sliced

  • 1/2 cup rasberries

  • 1/2 cup blueberries

  • 1 teaspoon lemon thyme

  • 200g mascarpone

  • 200g double cream

  • 1 teaspoon vanilla extract

  • 1 Tablespoon powdered icing sugar

  • 1/2 cup pistachios, roughly chopped

  • pure maple syrup




Directions

  1. Arrange the fruit around a serving dish.

  2. Sprinkle over the thyme leaves.

  3. Using an electric mixer, whish together the mascarpone, cream, vanilla extract and sugar until light and fluffy.

  4. Pipe dots of the mixture over the fruit salad, reserve the remainder to serve with the salad.

  5. Scatter the pistachios over the salad and finish with a drizzle of maple syrup.
