

These versatile turkey burgers are packed full of healthy ingredients, including spinach, oats, egg whites, onion and feta. They are super easy to make - you can even get the kids invloved! I think the best part about these burgers are all the additional extras you can add to your burger. Get creative and serve them up on a toasted bun (whole grain, gluten free, lettuce leaf, etc), with tomatoes, avocado, lettuce, pickles, grilled zucchini, cheese - the possibilities are endless! The burger patties freeze incredibly well and can be stored up to 3 months.
Ingredients
300g spinach, chopped (if using frozen, thaw & drain)
500g turkey mince
1 cup oats
2 egg whites
1 cup crumbled feta
1/2 cup onion, finely chopped
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1 pinch salt
Directions
Wash, thaw (if using frozen) and drain spinach by placing inside a clean tea towel and wringing out.
Peel and finely chop onion.
Add all ingredients into a large mixing bowl and mix until all ingredients are combined.
Using your hands, take a handful of mixture and shape into 6 burger patties.
Heat a fry pan to a medium heat and spray with olive oil spray. You can also grill the burger patties on a BBQ, over a medium high heat.
Cook burgers on both sides, 4-5 minutes per side.
Serve warm on your choice of toasted bun, lettuce leaves etc.
