Smoked Salmon Egg Stuffed Avocados

These smoked salmon & egg stuffed avocados are a great nutrient-dense meal choice that can be enjoyed as either a healthy breakfast or lunch. High in good fats (monounsaturated & polyunsaturated), as well as protein, vitamins and minerals, this meal is guaranteed to keep you feeling fuller for longer! Remember to avoid eating smoked salmon if you are pregnant, and ensure to purchase a good quality smoked salmon, from a reputable supplier.



Ingredients

  • 4 large ripe avocados, halved & seed removed

  • 120 grams smoked salmon

  • 8 eggs

  • salt & pepper (to taste)

  • Chili flakes (optional)

  • 1 Tablespoon fresh dill, chopped



Directions

  1. Preheat oven to 200C or 180C fan forced.

  2. Scoop out a small amount of each avocado, then layer the smoked salmon and add the egg.

  3. Season with salt & pepper and place into the oven, cooking for 10 minutes.

  4. Remove from the oven and sprinkle with chili flakes (optional) and dill.

  5. Serve hot.
