No-Bake, Macadamia, Strawberry & Lime Slice





If you have a sweet tooth, then this decadent no-bake slice is for you! Packed full of nutrient dense ingredients including dates and macadamia nuts, the slice has a rich, creamy texture and is loaded with antioxidants, fibre, and monounsaturated fats. Macadamia nuts are low in carbohydrates and sugar, making them unlikely to spike your blood sugar levels. They’re also linked to several health benefits, including improved digestion, heart health, weight management, and blood sugar control. So instead of reaching for a bowl of ice-cream post dinner, why not enjoy a square of this delicious slice served with some mixed berries.



Ingredients


Slice Base:

  • 200g pitted dates

  • 1 cup strawberries, chopped

  • 1/2 banana

  • 300 grams unsalted macadamia nuts

  • 3 Tablespoons chia seeds

  • 3 Tablespoons coconut oil, melted

  • 1/2 cup desiccated coconut

  • 1 teaspoon vanilla extract

Topping:

  • 150 grams unsalted macadamia nuts

  • 160 grams maple syrup

  • 100 grams coconut oil, melted

  • 5 Tablespoons lime juice

  • 1 teaspoon vanilla extract


Directions

  1. Spray and line a baking tray (approximately 24cm x 24cm), set aside.

  2. Place the dates into a food procesosr and blitz until smooth. Add in remaining slice ingredients and blitz again until the mixture is well combined. (If the food processor gets stuck add a dash of water until it gets moving).

  3. Spread the mixture evenly onto the baking tray and place into the freezer to set.

  4. Clean the food processor and then add all icing ingredients together and blitz until mixture is smooth and creamy.

  5. Remove slice from freezer and top with icing, smoothing out to make sure entire slice is covered.

  6. Place back into the freezer for 1 hour to set.

  7. Remove from freezer and cut into even squares. The slice can be stored in the fridge or freezer - if you like a soft gooey slice, store in the fridge, if you prefer a firm slice, store in the freezer and allow to defrost for 10 mins before enjoying.
