

This rice-style dish is healthy, plant-based and easy to make - ready in just 15 minutes! Cauliflower rice is a popular low carb substitute for rice, that is packed with vitamins and minerals but also has a similar look and feel to rice. Mushrooms are packed with fibre, vitamins, and minerals, being a good source of antioxidants, B vitamins, beta glucan (form of soluble fibre) and potassium. This meal can be enjoyed on its own, or as a delicious side dish - simply add a portion of meat or additional vegetables. Enjoy for dinner and store any leftovers in the refrigerator for lunch the next day!
Ingredients
300g cauliflower rice
1 Tablespoon olive oil
2 spring onions, finely chopped
2 garlic cloves, minced
250g mixed mushrooms, sliced
2 cups spinach
1 Tablespoon low sodium soy sauce
Directions
Cook the cauliflower rice as per packet instructions. Set aside to cool.
In a large frypan, heat the olive oil over a medium heat and add the spring onion and garlic, cooking until soft.
Add in the mushrooms, sauteing until cooked, then add in the spinach, cooking until wilted.
Mix in the cauliflower rice and soy sauce, mixing until the sauce has been fully absorbed. Serve immediately and enjoy!
