Kids Chilli Con Carne




This family friendly Chilli Con Carne is a mild yet delicious recipe that is packed full of vegetables! My son and I love to make this recipe, it is a great 'make over the weekend recipe' with leftovers we can enjoy for a quick mid-week lunch or dinner!



Ingredients

  • 1 teaspoon olive oil

  • 1 small brown onion, finely chopped

  • 2 cloves of garlic, crushed

  • 1 medium carrot, grated

  • 1 small zucchini, grated

  • 2 celery stalks, finely chopped

  • 1 teaspoon cardamom

  • 1 teaspoon smoked paprika

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon mild chilli powder

  • 500g lean beef mince

  • 400g tin chopped tomatoes

  • 300ml beef stock

  • 240g tin cooked black beans, drained

  • 1 red capsicum , chopped

  • 125g cup corn (tinned or frozen)

  • 2 fresh limes



Directions

  1. Heat the oil in a large pot over a medium heat. Add the onion and cook for 2 to 3 minutes until it softens. Add in the garlic, carrot, zucchini, and celery, and cook for further 2 minutes.

  2. Add in the spices and mix well.

  3. Add in the mince and cook for 5 minutes or until the meat has browned.

  4. Pour in the stock and tinned tomatoes and simmer for 15 minutes.

  5. Add in the black beans, capsicum and corn and cook for another 15 minutes.

  6. Remove from the heat and add in some fresh lime juice to taste.

  7. Serve immediately with steamed rice, sour cream, tortilla chips and lime wedges. Enjoy!
