1 cup natural almond butter
½ cup packed coconut sugar
¼ cup maple syrup
2 eggs
1 tablespoon coconut oil, melted and cooled
⅓ cup unsweetened high quality cacao powder
¼ teaspoon baking soda
⅛ teaspoon salt
¼ cup dark chocolate chips
Chocolate drizzle (optional):
2 tablespoons dark chocolate chips
½ teaspoon coconut oil
Directions
Preheat oven to 180C.
Spray and line a baking tray with baking paper.
In a large mixing bowl, mix together almond butter, coconut sugar, maple syrup and eggs until smooth and well combined.
Add melted coconut oil and continue mixing until smooth.
Mix in the cacao powder, baking soda and salt, until well combined. Stir through chocolate chips.
Pour the brownie batter into the baking tray and spread evenly using a spatula, making sure to get into corners.
Bake for 15-20 minutes. The brownies are best when slightly gooey in the middle. Allow the brownies to cool before removing and cutting.
If you wish to add the chocolate drizzle, melt the chocolate chips and coconut oil in a microwave safe bowl for 40 second intervals, until chocolate has melted. Use a spoon to drizzle over the brownies. Cut into squares and enjoy!
