Garlic Butter Salmon with Lemon Asparagus

This recipe is a delicious, quick and healthy dinner option the whole family will love. Salmon is a nutritionally dense, oily fish, that is an excellent source of omega-3-fatty acids, protein, postassium, vitamin B12 and selenium. While the asparagus is a great source of fiber, folate, and vitamins A, C, E and K. This one-pan meal is packed with flavour and ready in under 30 minutes - making it the perfect addition to your weekly meal plan!



Ingredients

  • 3 medium boneless salmon fillets (skin on)

  • salt & pepper to season

  • 3 bunches of asparagus, washed and cut

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1/4 cup butter

  • juice of 1/2 lemon

  • 1 tablespoon parsley, chopped

  • sliced lemon, for garnish



Directions

  1. Bring salmon fillets to room temperature before frying, and remove excess moisture by patting dry each fillet with paper towel.

  2. Season each salmon fillet with salt and pepper.

  3. To prepare the asparagus, wash and trim the ends, then blanch in boiling water for 1-2 minutes, soaking in ice water immediately after. Remove from water, drain and set aside.

  4. Heat olive oil in a large fry pan over a medium-low heat. Place salmon fillets into the pan and cook on both sides until golden brown (approx 3-4 minutes each side). Remove salmon from the pan and set aside.

  5. Heat the fry pan over a medium heat, adding in minced garlic, cooking for a minute.

  6. Add in the vegetable broth to deglaze the pan and bring to a simmer. Stir in butter, lemon juice, and parsley until combined.

  7. Place the asparagus into the pan, covering in the garlic butter sauce and cook for 2 minutes. Gently place salmon fillets into the pan, spooning over sauce and heat for a further minute.

  8. Serve immediately, garnish with parsley and lemon slices.
