Coconut Lemon Bliss Balls

These deliciously creamy, zesty, no bake coconut lemon bliss balls are an easy to make tasty treat! The recipe is dairy, refined sugar & gluten free - making it a healthy snack the whole family will enjoy. The additional protein powder (optional) will make these balls the perfect post workout snack!



Ingredients

  • 3/4 cup almond meal

  • 3/4 cup desiccated coconut

  • 1/2 cup raw cashews, soaked

  • 1/4 cup lemon juice

  • 2 tablespoons coconut oil, melted and cooled

  • 2 tablespoons coconut milk

  • 2 tablespoons maple syrup

  • 2 lemons, zested

  • 1 scoop protein powder (optional - I love Sunwarrior classic plus organic natural powder)

  • 1 cup desiccated coconut for coating balls



Directions

  1. Quick soak the cashew nuts in a covered bowl of hot water for 10 minutes then rinse and drain.

  2. Place all ingredients into a food processor and blitz until well combined.

  3. Place mix in fridge for 15 minutes, allowing it to firm up.

  4. Take out of fridge and roll into balls.

  5. Place desiccated coconut in a shallow bowl and roll the balls to coat them.

  6. Store in the fridge in an airtight container for up to 1 week. They can also be frozen for up to 3 months.
