Choc Coconut Protein Balls




Getting the kids involved in the kitchen couldn't be easier with this simple and delicious chocolate protein ball recipe! Packed full of fibre, protein and monounsaturated fats, they are not only easy to make, but also good for you! The recipe is dairy & refined sugar free - making it a healthy snack the whole family will enjoy.


Ingredients

  • 1 cup dried pitted dates

  • 1/2 cup organic cacao powder or cocoa powder

  • 1/4 cup raw honey or pure maple syrup

  • 2 cups unsweetened desiccated coconut

  • 1/4 cup rolled oats

  • 1/2 cup natural cashews

  • 1 Tablespoon chia seeds

  • 1 teaspoon vanilla extract



Directions

  1. Place one cup of desiccated coconut into a shallow bowl or container and set aside.

  2. Place all remaining ingredients into a food processor and blitz until the mixture comes together. If it gets stuck, add a dash of water to get it moving and mix until all ingredients are well combined.

  3. Scoop out mixture and using your hands roll into balls (you can make as big or small as you like).

  4. Place balls in the bowl of coconut and roll to coat.

  5. Store in the fridge in an airtight container for up to 1 week, or freeze for up to 3 months.
