Your family will love these sausage rolls, which use a combination of chicken mince and vegetables, making them delicious as well as nutritious! Lean chicken mince is a great source of protein and the added veggies help to boost our daily intake, with the addition of the curry powder adding a warmth to the sausage rolls - making them the ideal tasty lunch, or on-the-go snack option.
Ingredients
Filling
1 teaspoon olive oil
1 onion, finely chopped
1 zucchini, grated
2 small carrots, grated
500g sausage mince
1 cup breadcrumbs
2 Tablespoons tomato sauce
1 egg, lightly beaten
1 teaspoon curry powder (optional)
Pastry
3 puff pastry sheets, defrosted
1 egg, lighltly beaten
Sesame or poppy seeds for on top
Directions
Preheat the oven to 200C or 180C for fan forced and spray and line a large baking tray.
Place all filling ingredients into a large mixing bowl and mix until well combined.
Cut pastry sheets in half lengthways, and place a line of filling down the middle of the pastry.
Brush the edges of the pastry with the egg mix and gently roll up.
Cut the sausage rolls into equal portions and brush the tops with the egg mix to moisten.
Place sausage rolls onto the baking tray and bake for 25 minutes, or until the tops are golden brown.
Serve and enjoy hot.
