Cherry Chocolate Chip Muesli Bars

Packed with natural ingredients guaranteed to keep the family feeling energised and full - plus they take less than 20 minutes to make! The only problem is they won’t last long...



Ingredients

  • 2 cups rolled oats

  • 1 cup chopped almonds

  • 1 cup unsweetened shredded coconut

  • 1/2 cup honey

  • 3 tablespoons unsalted butter

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon sea salt

  • 1 1/2 cups dried cherries

  • 1 Tablespoon collagen powder

  • 1/2 cup dark chocolate chips



Directions

  1. Preheat the oven to 160°C. Line a baking tray with parchment paper.

  2. Place the oats and almonds on the tray and toast for 10 minutes. Add the coconut and toast for a further 5 minutes.

  3. Pour the oat mix into a large mixing bowl and add the cherries, collagen and 3/4 of the choc chips.

  4. In a small saucepan, combine the honey, butter, vanilla and salt, cooking over a medium heat, until the butter is melted.

  5. Pour the wet mix into the dry mix and combine.

  6. Line a 9 x 13-inch baking dish and spread the mix evenly into the dish. Sprinkle remaining choc chips and press firmly to set.

  7. Refrigerate for 2 hours. Enjoy!
