2 cups rolled oats
1 cup chopped almonds
1 cup unsweetened shredded coconut
1/2 cup honey
3 tablespoons unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1 1/2 cups dried cherries
1 Tablespoon collagen powder
1/2 cup dark chocolate chips
Preheat the oven to 160°C. Line a baking tray with parchment paper.
Place the oats and almonds on the tray and toast for 10 minutes. Add the coconut and toast for a further 5 minutes.
Pour the oat mix into a large mixing bowl and add the cherries, collagen and 3/4 of the choc chips.
In a small saucepan, combine the honey, butter, vanilla and salt, cooking over a medium heat, until the butter is melted.
Pour the wet mix into the dry mix and combine.
Line a 9 x 13-inch baking dish and spread the mix evenly into the dish. Sprinkle remaining choc chips and press firmly to set.
Refrigerate for 2 hours. Enjoy!
