Banana Oat Pancakes




Who doesn't love pancakes? And these have the added bonus of being healthy! I love cooking with oats, they are versatile and contain excellent sources of fibre, especially beta glucan, and are high in vitamins, minerals, and antioxidants. They have been found to lower blood sugar and cholesterol levels, making them the perfect ingredient to start your day with. Including bananas in the mix is also a great way to get that extra serve of nutrient boosting fruit first thing in the morning!



Ingredients

  • 1 cup rolled oats

  • 2 eggs

  • 1 large ripe banana

  • 1 teaspoon cinnamon

  • 1 teaspoon pure vanilla extract



Directions

  1. Add the oats to a food processor and blitz until they resemble flour.

  2. Add remaining ingredients and blitz until the mixture is combined and it has formed a batter. If the mixture is too runny, add some more oats, if it is too thick, add a dash of water or almond milk until it is the consistency you like.

  3. Spray and heat fry pan over medium-low heat.

  4. Using a large spoon, pour the batter into the fry pan, making as big or small as you like.

  5. Cook the pancakes for 2-3 minutes, or once the batter starts bubbling, flip the pancakes, cooking for a further 1-2 minutes.

  6. Serve hot with mixed berries and maple syrup, or toppings of your choice.
