Apple Cinnamon Oatmeal Slice

Enjoy this nutrient dense slice as either a healthy snack or on-the-go breakfast. Perfect for kids, teenagers or busy adults, who don't have time to sit down for a proper meal, or need that extra energy boost. Oats are incredibly nutritious, rich in antioxidants, high in soluble fibre, helping to lower cholesterol, improve blood sugar control and fill you up! If you would like some additional added fibre, grate the apple with the skin on.



Ingredients

  • 3 cups rolled oats

  • 3 teaspoons cinnamon

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1/2 cup reduced sugar applesauce

  • 1/3 cup maple syrup

  • 1 cup unsweetened almond milk

  • 1/4 cup coconut oil, melted

  • 1 egg

  • 2 teaspoons vailla extract

  • 1 Granny Smith apple, peeled & grated



Directions

  1. Preheat oven to 200C or 170C for fan forced.

  2. Spray & line a 8x8" baking tray and set aside.

  3. In a large mixing bowl add 1 1/2 cups of oats, cinnamon, baking powder, & salt, stirring to combine.

  4. Blitz the remaining oats in a food processor, until oats turn to flour, and then add to the dry mix.

  5. In a separate mixing bowl, combine the applesauce, maple syrup, almond milk, coconut oil, egg and vanilla, whisking together then pouring into the dry mix, gently stirring until combined.

  6. Fold the grated apple into the mix, then pour into the baking tray.

  7. Bake for 35 minutes, or until golden brown and set.

  8. Remove from oven and allow to cool. Cut into slices and store in an airtight container in the refrigerator.
