Sweet Potato & Pear Fritters





This delicious sweet potato & pear fritter recipe expands on a traditional pancake recipe, packing it full of fruits & veggies that don’t change the taste or texture too much, making it perfect for your fussy eater to try!


Ingredients

  • 500 grams sweet potato, peeled & diced

  • 2 large pears, peeled & diced

  • 1 teaspoon cinnamon

  • ½ teaspoon all spice

  • 1 egg

  • 1½ cups wholemeal self raising flour

  • Olive oil for frying



Directions

  1. Steam the sweet potato until soft. Set aside to cool.

  2. In a small saucepan over a medium-low heat, add the pears, cinnamon and all spice and stew the pears, until they are soft. Set aside to cool.

  3. Using a food processor, blitz the sweet potato and pears until smooth. Mix in the egg and flour and mix until combined. If mixture is too sticky, mix in another 1/2 cup of flour.

  4. Heat the olive oil in a frypan over a medium-high heat.

  5. Fry tablespoonfuls of the mixture until golden on each side. Batch cook and place the cooked fritters in an oven proof dish and place in the oven on a low heat to keep warm.

  6. Serve hot or cold. Enjoy!
