Sautéed Barramundi in a Lemon Brown Butter Sauce




This quick, easy, and delicious barramundi dish is guaranteed to get the family excited about eating fish, plus it is a great addition to your weekly dinner planner. Barramundi is a white fish with a firm, moist texture that is low in fat and high in lean protein. With a naturally sweet, buttery flavour, it goes perfectly with the lemon brown butter sauce!



Ingredients


For the Lemon Brown Butter Sauce:

  • 4 Tablespoons unsalted organic butter, cut into 2 cm cubes

  • 3 cloves of garlic, minced

  • 4 Tablespoons freshly squeezed lemon juice

  • Small bunch of fresh basil, finely chopped

  • Sea salt, to season

  • Finely ground black pepper, to season

For the Fish:

  • 2 x 200g Barramundi fillets

  • 1/4 cup plain flour

  • 1 teaspoon garlic powder

  • Pinch of sea salt

  • Pinch of finely ground black pepper

  • 2 teaspoons Extra Virgin Olive Oil

  • 1 Tablespoon unsalted organic butter




Directions

For the Lemon Brown Butter Sauce:

  1. Place the butter in a small saucepan over medium heat to melt.

  2. Once melted, add in the garlic and whisk for around 3 minutes. Constantly stir the butter as it starts to bubble and foam. When the colour changes to a light brown and little brown bits appear at the base of the pan, remove from the heat and pour it into a small mixing bowl.

  3. Pour in the lemon juice, 3/4 of the chopped basil, and season with a pinch of salt and pepper. Allow to cool slightly before tasting, and adjust with more lemon juice, salt and pepper if required.

  4. Set aside.

For the Barramundi:

  1. Remove excess moisture from the fish by patting it dry with paper towels.

  2. In a shallow dish, mix together the flour, garlic powder, salt and pepper. Coat the fish on both sides.

  3. Heat the butter and olive oil in a non-stick frypan over a medium high heat until hot.

  4. Gently place the fillets skin side down into the pan and fry for 3-5 minutes or until browned. Flip the fillets and cook for a further 3-5 minutes or until browned.

  5. Remove from the pan and place onto serving plates.

  6. Drizzle each fillet with 1-2 tablespoons of the lemon butter sauce and sprinkle with the remaining basil.

  7. Serve with steamed vegetables, steamed potatoes, or any other vegetables of your choice.
