

There is nothing better than starting the day with a little bit of comfort food, and this pumpkin spice granola ticks all the boxes - full of sweet and spicy flavours it pairs well with milk, yogurt, fruit, or is great on its own as a delcious snack. Packed full of oats, nuts, and real pumpkin pureé, it is a great source of slow-burning carbohydrates, protein and healthy fats. Best of all it takes minimal time to make and once it is done you have a delicious breakfast or snacks ready for the whole week!
Ingredients
3 cups rolled oats
1/4 cup coconut sugar
1/4 cup pepitas
1/4 cup walnuts, chopped
1/4 pecans, chopped
1/4 cup almonds, chopped
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
3/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice
1/2 teaspoon vanilla extract
1/4 cup (60ml) coconut oil
1 tbsp maple syrup
1 cup pumpkin pureé
Directions
Preheat oven to 180C or 160C fan forced and line a baking tray with baking paper. Set aside.
Place the oats, sugar, nuts & seeds, spices and vanilla extract into a large bowl and stir until well combined.
Add in oil, maple syrup and pumpkin purée, mixing until well combined and well coated.
Tip onto the baking tray and spread out evenly.
Place in the oven for 40 minutes, taking out every 15 minutes to toss, making sure the oats toast evenly.
Once the mixture has darkened and is crisp to the touch, leave to cool completely before storing in an airtight container, at room temperature for up to a week.
Serve with milk, yoghurt, fruit or enjoy as a snack on it's own. Enjoy!
