These granola breakfast cookies make the perfect grab-and-go breakfast or perfect morning tea snack, suitable for the whole family! Made with delicious natural ingredients, these beat store-bought breakfast bars any day of the week!
Ingredients
1 1/2 cups rolled oats
1 1/2 cups granola (high protein option if possible)
1/4 cup raisins
1/4 cup pepitas
1/4 cup coconut chips
1/2 cup dark chocolate chips
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
2 ripe bananas mashed
1/2 cup peanut butter
1/4 cup honey
1/2 teaspoon vanilla extract
Directions
Preheat oven to 190C or 170C fan forced and line a large tray with baking paper.
In a large bowl combine all dry ingredients, mix together then set aside. In a medium bowl add the wet ingredients and mix to combine. Add the wet ingredients to the dry mix and stir well to combine.
Using your hands, form dough into balls (sizes you like) and place on prepared baking tray. Gently flatten cookies with the palm of your hand (cookies will not spread when baking).
Bake for 20 minutes, or until golden brown. Remove from oven and let cool for 5 minutes before transfering to a wire rack to cool completely. Serve immediately or store in an airtight container for up to a week. Cookies can also be stored in a ziplock back in the freezer for up to a month. Enjoy!
