Apple & Pear Breakfast Crumble



There is nothing better than starting the day with a little bit of comfort food, especially on a cold autumn morning! A family favourite among my household is my apple & pear breakfast crumble. This delicious crumble can double as a breakfast or dessert option, using only the sugars from the fruit to sweeten it, and best of all it is ready in 10 minutes! To add extra fibre and protein to the meal, I use greek yoghurt and a secret ingredient - Barley+ Protein Clusters, which are made with a super-grain developed by CSIRO. It is an excellent source of fibre, containing 28% of your daily fibre needs!



Ingredients


For the Crumble:

  • 4 large ripe pears, peeled & chopped

  • 4 large ripe granny smith apples, peeled & chopped

  • 3 Tablespoons water

  • Seeds from 1 vanilla pod

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1/2 teaspoon ground cardamom

To Serve:

  • Greek yoghurt

  • Barley+ protein clusters




Directions

  1. Over a low-medium heat, place all crumble ingredients into a medium pot and cook for 10 minutes, or until the fruit is soft with a syrup like consistency - stirring continuously to prevent the mixture sticking to the bottom of the pot.

  2. Serve with greek yoghurt and barley + protein clusters. Enjoy!
