This quick and healthy dish mince dish is packed with nourishing vegetables and is ready in only 30 minutes! It makes for a quick and easy mid-week family dinner, and is great for leftovers the next day.
Ingredients
300g Brown basmati rice
800g Extra lean beef mince
500g Mushrooms, sliced
300g Broccoli florets
Half Wombok cabbage, thinly sliced
1 cup Kale, chopped
1 Tablespoon Tamari
50ml Water
Sea salt and Black pepper, to season
Directions
Cook the rice according to package directions.
While th rice is cooking, heat a large pan over medium-high heat. Add the mince to the pan, breaking up with a wooden spoon, until it is browned and no longer pink. Season with salt & pepper. Transfer the cooked beef into a bowl and set aside.
Add the mushrooms to the pan and cook for around 5 minutes or until browned. Season with a pinch of salt.
Reduce to medium heat and add the broccoli, cabbage, and kale to the pan, stirring to combine. Add the tamari & water, covering with a lid and stirring occasionally - for 5 minutes or until the broccoli, cabbage, and kale are tender.
Add the cooked mince back to the pan and mix through with the vegetables. Season with salt & pepper if required.
Mix the rice into the mince and vegetable mix and serve. Enjoy!
